In Ayurvedic wellness, kitchari plays a significant role in supporting digestion, detoxification, and rejuvenation of the body. This dish is gentle on the digestive system and balances all three doshas - Vata, Pitta, and Kapha.
Kitchari is often recommended during Ayurvedic cleanses or when someone is feeling out of balance, as it is easy to digest and provides essential nutrients to support overall well-being. The combination of rice and lentils provides a complete source of protein while being light on the stomach. This dish is known to promote internal harmony, aid in cleansing toxins from the body, and restore balance to the mind and body.
Ingredients:
1/2 cup green lentils
1/2 cup basmati or other white rice
4 cups vegetable broth (salted)
1 tbsp ghee (may be substituted for olive oil to make vegan)
1 tsp cumin seed
1/2 tsp minced ginger
1/4 tsp powdered turmeric
1/4 tsp black pepper
Garnished with cilantro and a lime
Instructions:
Soak rice and lentils in water for 15 minutes. Strain and rinse with cool water.
In a medium sized pot, roast cumin seeds in ghee (or oil) over low heat until fragrant. Add ginger and turmeric.
Add rice and lentils to the pot, season with pepper, stir in 4 cups broth.
Increase the heat to bring to a gentle boil, then reduce the heat to simmer uncovered for 30 minutes, stirring regularly.
Cook until the texture is soft and porridgy, adjust seasoning to taste. Serve with a lime and cilantro garnish.
